In the video, Israelis demonstrate how they can hack your personal information, your vehicle, all critical infrastructure and basically anything that is controlled by a computer. So, what’s stopping them from imbedding this malware into the systems they are hired to “protect” and then using this as blackmail leverage?

You’re completely right on this. As explanation: both, Minix and Linux, are in fact UNIX systems. Minix, from Andrew S. Tannenbaum (see “Operating Systems, Design and Implementation”, 2. Ed., Prentice Hall) designed Minix as a minimal but functioning Unix operating system which makes it preferable for the ME processor inside the Intel/AMD processor.
